But we need your help


One of the long-time dreams of Compassionate Chefs cafe has been to bring the children of the Ghandhi Ashram and the children of the Tenderloin After School Program together. Now, from May 21st to 29th, that will finally happen! We have partered with Ekatva to help bring the children here.

For the last two years, the funds we have been raising have been supporting a music program - Beat Crazy - that has been working with the children in the Tenderloin After School Program and at the Gandhi Ashram in Ahmedabad. The children of India will be performing and touring the United States in May and will finally get to meet and perform with their friends in America. But we need your help.

Project Ahimsa has offered to donate $30,000 to the tour, but only if we can raise $30,000 by April 2. This drive has already raised $12,000. Additionally, Compassionate Chefs Cafe is donating $8,000, but we need an additional $10,000 to take advantage of this generous offer.

Please help us make this a reality. Compassionate Chefs Cafe has dedicated the last six years to helping
children become global citizens of the world and nothing embodies that goal better than finally having the children across the ocean meet the children across the street.

Holi - the Indian festival of Spring, color and fertility - will be celebrated on March 8th this year. Get ready to be splattered.Holi is the second largest Indian festival after Diwali in the winter. It is claimed to have been inspired by the divine love between Krishna and Radha.

The traditional foods of Holi are sweet, to celebrate the sweetness of life.  These vary by region, but a popular drink for Holi is Thandai. Here’s the recipe so you can make your own.

Bottoms up!

Ingredients:
1 1/2 liter - Water
1 1/2 cups - Sugar (chini)
1 cup - Milk
1 tbsp - Almonds (badam)
1 tbsp - Watermelon/Cantaloupe seeds (dried and skinned) (kharboje ke beej)
1/2 tbsp - Poppy seeds (khus khus)
1/2 tbsp - Aniseed
1/2 tsp - Cardamom powder (elaichi powder)
1 tsp - Peppercorns (whole) (sabut kali mirch)
1/4 cup - Dried or fresh rose petals (gulab ki pati)

How to make thandai :
1. Take a pan and add 1/2 litre of water and sugar to it. Let it soak for 2 hours.
2. In a separate bowl soak all the other dry ingredients in 2 cups of water for minimum 2 hours. After 2 hours grind these soaked ingredients into a fine paste.
3. Mix remaining water to the paste and strain it using a strong muslin strainer to extract the liquid into a vessel until the residue becomes dry.
4. Now to this strained mixture add milk and sugar syrup.
5. Add the cardamom powder in the milk.
6. Keep it for chilling in the fridge for 2 -3 hours before serving.
7. Serve it cold with some chopped almonds.
To go with your sweet drink, try making some vegetable pakoras. Many snack foods are eaten during Holi and these are especially popular. So much so, that they are part of the regular menu at New Delhi Restaurant.
Vegetable Pakoras
Ingredients
1 cup Chickpea Flour (Besan)
2 tbsp Oil
1 teaspoon Ground Cumin
1 1/2 teaspoon Salt
1-2 each Chopped Green Chilies (Jalapeno)
1/2 cup Water
1 Potato
1 small Cauliflower
2 Cabbage
5 sliced Spinach
1 1/2 cup Sliced Onion
Method
1. Boil the potato until just tender, peel and chop finely.
2. Finely chop cauliflower and onion. Shred the cabbage and spinach.
3. Mix first set of ingredients well. Beat in a blender for 4-5 minutes to incorporate air (this will make the batter fluffier).
4. Let batter rest 1/2 hour in a warm place.
5. Add the vegetables and mix in evenly.
6. Deep fry in oil that is heated to 375″
7. Drain on paper towels and serve immediately.
8. Serve with cilantro or mint chutney or tomato ketchup
